In the highlands of Jalisco, the entrance to a near century old distillery stands firm. Behind it, rows of blue agave stretch toward the mountains — planted, tended, and harvested by the same family for three generations.

A few states south, in the mountains above Oaxaca, a maestro stands beside a copper pot still and a stone tahona his grandfather used before him. These historic places — and the families who have protected them — are where Mesa Blanca is born.

We are not building a spirits brand, we are setting the table for thousands of California bars & restaurants operating with beer and wine licenses to legally offer their guests a real agave spirit.

Under California Business & Professions Code §23398.5, a TTB-approved Soju spirit can be sold at beer and wine licensed establishments.

Mesa Blanca is that spirit — a genuine blend of authentic tequila and mezcal, classified as Soju by the TTB, and fully legal for Type 41 and Type 42 operators.

No spirits license upgrade, no additional application, no waiting period.

Spicy Guava Margarita

    • 2 oz Tequila

      ¾ oz Guava Juice

      ¾ oz lime Juice

      4 dashes Fire bitters

    • Combine Tequila, Guava & Lime juice, and fire bitters in a shaker.

    • Shake briefly.

    • Srain into a rocks glass with ice.

    • Garnish with Jalapeno or lime.

    • 2 oz Tequila

    • ¾ oz Grapefruit Juice

    • ¾ oz orange Juice

    • ½ oz Pineapple Juice

    • ½ oz Lime juice

    • Pinch of Salt

    • Grapefruit soda

    • Combine all ingredients into a shaker.

    • Shake briefly and pour into a glass coated with Tajin Rim.

    • Top with Grapefruit soda

    • Garnish with orange slice.

Cucumber Smoke & Fire

    • 2 oz Mezcal

    • 1 oz Lime Juice

    • ¾ oz Agave

    • ½ oz Cucumber

    • 4 slices Serrano Peppers

    • 3 sprigs Cilantro

    • Muddle cucumber, Serrano pepper and cilantro in a shaker.

    • Add Mezcal, agave, and  lime.

    • Shake briefly and pour into a rocks glass with ice.

    • Garnish with cucumber slices and Serrano Pepper.

Watermelon Fino

    • 2 oz Tequila

    • 2 oz watermelon juice

    • ½ oz Fino Sherry

    • ½ oz Lime juice

    • ½ oz agave

    • Combine all ingredients into a shaker.

    • Shake briefly and strain over ice into a rocks glass.

    • Garnish with lime wheel & watermelon slice

Oaxacan Old Fashioned

    • 2 oz Mezcal

    • ¼ oz Agave

    • 5 Dashes Angostura bitters

    • 3 Dashes orange bitters

    • Pour mezcal over large ice cube. 

    • Add dashes of angostura and orange bitters.

    • Stir. Add orange peel.

Hibiscus Heat

    • ¼ oz Hibiscus Ginger Syrup

    • ¾ oz Lime Juice

    • Pour Mezcal.

    • Hibiscus ginger syrup into a shaker.

    • Shake and strain over ice into a rocks glass. 

    • Garnish with candied hibiscus flower or lime wheel.
